A super simple, easy, and fast...and delicious salad for any time
1 tbs honey 1/2 Cup seasoned rice vinegar 1/4 teaspoon crushed red pepper flakes (or up to 1/2 tsp)
Salad 2 seedless English cucumber, sliced thinly with a mandoline 1/2 red onion sliced thin 1/2 cup chopped unsalted peanuts
Mix honey, vinegar and red pepper flakes in a small bowl. Add cucumbers and red onion, let stand at room temperature for at least 15 minutes. Sprinkle chopped peanuts and serve.
